Gets the model the agent's evaluations run on.

`provider` is the model the agent's admins chose, from the workspace's own LLM configs. When it is absent, evaluations run on `agentProvider` — the model the agent's deployed revision answers with. An agent with neither (an external agent, or one with no deployed model step) cannot be evaluated until a model is chosen.
